Instructions

  1. 1. Saffron Capsules
  2. Blend the sodium alginate with the saffron infusion until fully dissolved.
  3. Let the mixture rest for 30 minutes to remove air bubbles.
  4. Dissolve calcium chloride in the mineral water.
  5. Using a measuring spoon, gently drop the saffron mixture into the calcium bath.
  6. After 60 seconds, remove the spheres and rinse them in clean water.
  7. Result: soft capsules with a liquid core.

  10. Mix lemon juice and sugar until dissolved.
  11. Add soy lecithin.
  12. Blend at the surface to create foam.

  15. Heat pomegranate juice with agar-agar until fully dissolved and boiling.
  16. While hot, drip the mixture into the cold oil using a syringe or dropper.
  17. The pearls will instantly set.
  18. Strain and rinse gently with cold water.
  19. Plating
  20. Place 3–4 saffron capsules in the center of a dark plate
  21. Spoon lemon foam around the capsules
  22. Scatter pomegranate caviar precisely, not emotionally
  23. Serve immediately
