  1. In a small bowl, whisk together 2 tablespoons of ground flaxseed with 6 tablespoons of water. Let it sit for about 5 minutes until it thickens and forms a gel-like consistency.

In a mixing bowl, whisk together the almond milk, maple syrup, vanilla extract, cinnamon, nutmeg (optional), and a pinch of salt. Add the prepared flax egg to the mixture and whisk to combine.

Grease your small baking dish with coconut oil. Place the gluten-free bread slices (or cubes) in the dish, and pour the almond milk mixture over the bread. Press the bread down gently to ensure it soaks up the liquid. Let it sit for about 2-3 minutes to soak thoroughly.

Add 1 cup of water to the bottom of the Instant Pot. Place the trivet inside the pot.

Cover the baking dish with foil to prevent condensation from dripping onto the French toast. Carefully place the baking dish on top of the trivet inside the Instant Pot.

Close the Instant Pot lid, set the valve to "Sealing," and cook on high pressure for 15 minutes.

After the cooking time is up, allow the Instant Pot to release pressure naturally for 5 minutes, then carefully turn the valve to "Venting" to release any remaining pressure.

Carefully remove the baking dish from the Instant Pot. Let it cool for a minute or two before serving. Top with fresh fruit, powdered sugar, or a dollop of vegan butter if desired..
